The Banana chronicles 2 of 3 - Recipes for reducing food waste

Ripe bananas are useful things to have in the house but there is only so much banana bread anyone can eat.

 

Instead, here is recipe number 2 for easy home made foods to use reduce waste and use bananas in a different way. 


Four ingredient cookies:


Having made plain cookies, I would recommend making these banana enhanced cookies.


Step 1 - Mash a ripe banana or two into a pulp

Step 2 - Add muesli until the mixture has stiffened (Adding Oats is optional)

Step 3 - Add a small handful of preferred vine fruits

Step 4 - Using a teaspoon, place small dollops of the mixture onto a baking tray covered with parchment paper and flatten slightly.

Step 6 - Cook for 15 mins on 180'C.

Step 7 - Turn them over and cook the bases for a few minutes if the undersides seem undercooked.

Step 8 - Put somewhere to cool. 

Step 9 - Gently melt a about 10 pieces of chocolate in a Pyrex bowl placed over hot water, adding a tiny dash of cooking oil to make it easier to manage.

Step 10 - Decorate the cookies as desired with the melted chocolate, and let set in the fridge.


The original recipe uses desiccated coconut rather than muesli, but that is a matter of taste!
